Having definitively confirmed his vocation, Jacques CHIBOIS begins in 1974 a trip of France which is going to allow him to work with most big Chef, in particular, Jean DELAVEYNE, Roger VERGE, Louis OUTHIER, Chefs with whom it will remain, every time, one year on a average. His Trip of France is especially going to allow him to meet Michel GUERARD with whom it will work five years before its end of apprenticeship. In Paris, he will be responsible for all his television programs.
In the military service, he will be the particular cook of General 4**** and will leave the army as Staff Sergeant. Then he will take the Management of the Kitchens Staffs of the Club REGINE'S in Paris, New York and London as well as privates meals in Government Department.
In 1981, Jacques Chibois becomes the Leader of the ROYAL GRAY in the hotel Gray d'Albion, which is the first restaurant of the city of Cannes to have had 2 Michelin Stars and to be quoted as the best table by Gault & Millau, where he manage this complex with 4 restaurants and organizes the dinners of opening and the end of the Festival of the Movie of Cannes. In May, 1996, Jacques CHIBOIS opens her own house « La Bastide Saint Antoine ». In the heart of the Country Grassoise where the horizon is the sea, Jacques CHIBOIS welcomes you in his friendly simplicity. It's a real « Art de Vivre ». This ancient house of XVIIIth becomes Relais & Châteaux and Relais Gourmand in 2000, in a soft Provencal atmosphere.
Jacques CHIBOIS, fascinated cook and poet at his hours, likes especially the simple things. He is crazy about creative cooking, and he respects the real values of the local gastronomy, and perfectly knew moreover how to be inspired by the Provencal tradition.
