Originally from Bigorre, in the South-West of France, Sébastien Sanjou grew up in a family of gastronomy enthusiasts. Introduced to cooking at an early age by his father, he developed a strong sense of discipline and hard work, with the sole ambition of sharing his passion for cuisine.
In 2002, together with his wife, he discovered a house in the heart of the medieval village of Les Arcs-sur-Argens. Together, they imagined a place in their image, thus creating Le Relais des Moines, which in 2013 became a Michelin-starred restaurant.
Sébastien Sanjou draws his inspiration from the Mediterranean terroir. He creates contemporary cuisine, precise and respectful, enhancing the work of artisans, producers, breeders, and local fishermen.
With his team, he carefully selects the finest seasonal products. His cuisine is a dialogue between his Southern heritage, the richness of the Mediterranean, and his personal sensibility. A Master Chef of France, he is also the Executive Chef at the Hôtel Particulier Villeroy in Paris for The Collection group. As an ambassador of French gastronomy internationally, he has signed numerous prestigious events around the world: for the Ministry of Foreign Affairs, Renault Nissan, Sofitel, Grey Goose, Club Med, and Wanda Beijing.
Today, Le Relais des Moines is much more than a restaurant – it is a place of emotion, sharing, and loyalty to authentic taste.
